Ingredients
4 medium russet potatoes, sliced into one-quarter
inch slices (Can be sliced thinner, if desired)
½ onion, diced
3 tbsp butter
3 tbsp flour
1/2 tsp salt
2 cups milk
1
½ cups cheddar cheese, grated
1 1/2 cups ham, diced
In a medium skillet saute onions in
butter until translucent. Add diced ham to heat and brown slightly. In
a large sauce pan, combine milk, flour, butter, and cheese, and heat through
until cheese melts into milk mixture. Add salt until desired taste. Mix in
onions and ham.
Coat a large glass casserole dish with non-stick cooking spray or thin layer of oil. Spoon a small amount of sauce onto bottom of dish, just enough to coat. Layer sliced potatoes in a single layer, then cover with a layer of sauce. Continue layering potatoes and sauce until all ingredients
are used. If desired, sprinkle additional cheese on top of dish. Cover with
foil, bake at 375 for 30-45 minutes or until potatoes are cooked through. Remove
foil, and bake an additional 10-15 minutes until sauce has thickened and cheese
on top has turned golden brown. Remove from over and let sit for 10 minutes
before serving. Serves 6.
